Aqua e Vino

  • Aqua e Vino is the vision and lifelong aspiration of Italian-born and -trained Master Chef Gabriele Grigolon. After enjoying a career that includes famous restaurants in France, Italy, Monte Carlo, and the northeastern U.S., Chef Grigolon has recently launched his own boutique restaurant with a focus on bringing the small, local restaurant feel from the cobblestone streets of Northern Italy to Charlotte.

    • Vitello Tonnato - poached veal carpaccio, tuna caper aioli
    • Burrata - local homemade Siano burrata, heirloom tomatoes
    • Anguria - watermelon salad, cucumbers, tomatoes, onions, mint, ricotta
    • Fegatini - chicken liver truffle pate’ with crostini
    • Animelle - veal sweetbreads in padella, wild mushrooms, Marsala
    • Trippa - braised beef tripe, vegetable battuto, mint
    • Lingua - beef tongue, borlotti beans, salsa verde

    • Maiale - pork tenderloin in padella, local peach agretto, green pepper corn
    • Branzino - Spanish sea bass, zucchini crust, saffron sauce

    • Tajarin - fresh spaghettini, prosciutto di Parma, Parmigiano fondue
    • Trofie - classic Ligurian pasta, basil pesto, green beans, Yukon potato
    • Pollo – pan-fried chicken “my Nonna”-style, baby arugula, Grana Padano
    • Grigliata - classic Italian marinated grilled vegetables, Siano caciotta
    • Parmigiana - eggplant, tomato passata, fior di latte, basil, au gratin
