    • Verde Chickpeas - yogurt, charred eggplant, sundried peppers, pine nuts, preserved lemon
    • Sherry-Braised Pork Cheek - house-made potato chips, sherry jus, herbs
    • Gem Caesar - preserved lemon, Castelvetrano olives, charred alliums, Parmesan, sourdough gremolata, cured egg yolks
    • Marinated Olives & Almonds - orange, aromatics, herbs
  • Second Course (choice of one)
    • Spicy Tuna Crudo - Marcona almonds, salsa matcha, tangerine
    • Roasted Mushrooms - spiced yogurt, verde chickpea hummus, sumac onions
    • Roasted Carrots - maple glaze, pistachio dukka, tahini, pomegranate
  • Third Course (choice of one)
    • Porcini-Rubbed Hanger Steak - olive salsa verde
    • Grilled Octopus - stewed lima beans, chorizo, giardiniera
    • Skate Wing - chickpea flour dusted, jowl bacon, caper butter, fines herbes
    • Rigatoni - Calabrian chile, tomato sugo, merguez sausage, pecorino
