    • Spicy Tuna Crudo - Marcona almond salsa matcha, tangerine
    • Prosciutto Croquette - potato, prosciutto, greens, mustarda
    • Sherry-Braised Pork Cheek - potato chips, sherry jus, herbs
    • Verde Chickpea Salad - yogurt, charred eggplant, sundried peppers, pine nuts, preserved lemon, EVOO
  • Second Course (choice of one)
    • Charred Broccoli - pine nut romesco, lemon, Aleppo pepper
    • Roasted Carrots - maple glaze, pistachio dukka, tahini, pomegranate
    • Gem Caesar - preserved lemon, Castelvetrano olives, charred alliums, Parmesan, sourdough gremolata, cured egg yolks
    • Roasted Mushrooms - spiced yogurt, verde chickpea hummus, sumac onions
  • Third Course (choice of one)
    • Hanger Steak - olive salsa verde
    • Rigatoni - Calabrian chili, tomato suga, merguez sausage, pecorino
    • Skate Wing - chickpea flour dusted, jowl bacon, caper butter, fines herbs
    • Tagliatelle - local mushrooms, Sungold tomatoes, salsa di noci, walnuts, Parmesan
